Cook and philosopher
My favorite thing to do when I am in my restaurant is serving wine and making sure the vibe is right. I like doing this with the support of my main chef as we complement each other well. He provides culinary pleasure and I’m in charge of the experience a nice bottle of wine supplies. I’ve been working with small Italian winemakers for a while now. That allows me to offer interesting wines and to always surprise people with new things.
ON SPEAKING FRENCH
I basically live the same life as when I was still in Italy, a country I left 6 years ago. My wife introduced me to her own world. The only fundamental difference is that people speak French here.
I really like Italy, which is where I’m from. In Brussels, I’ve found something different, but something that has helped me grow a lot both personally and professionally: my wife, my son and my restaurant.
A BLIND TEST FOR LOVE
I first met my wife Delphine at a restaurant where I used to work. We decided to meet again a few days later and I invited her to the park. I put music on and she was recognizing every song from my playlist. At some point, I told her that I would fall in love with her if she recognized the next track I played. It was a song by Elliott Smith, one of my favorite artists. She obviously guessed right away!
A MEMORABLE SHIFT
I was finishing my shift once, in a restaurant where I used to work. It was on a Thursday. A group of 5 girlfriends were the last remaining guests and they were clearly looking to have some fun. I put on some music, poured them some more drinks and they ended up dancing in their bras right in front of me! A surreal and wonderful memory, especially considering one of them happened to be a good friend of my wife!

Cacio e pepe pasta! It’s our house specialty.
I worked with architecture studio Ihoas & Ihoas and my wife on this project. We kept some elements intact, such as the chairs, and added functional elements such as kitchen furniture. We also added personal items such as an old piece of furniture, some objects I’ve found throughout my life and which become very significant in this heterogeneous environment.
Over time, I’ve been able to find great collaborators for wine and architecture as well as essential ingredients. Bouchery provides me with the perfect bread and the Dierendonck butcher’s takes care of the meat, and it’s wonderful!
